One of the biggest challenges of baking cakes is learning How to Stop a Cake from Doming. I'm going to share three easy ways to solve this common cake problem and hopefully, you'll be baking beautiful level cakes (without a domed top!) before you know it!

Several years ago I wrote a post titled How to Bake a Level Cake for Cheap!  That post has been super popular for anyone wanting to bake flat cakes. But the other day when someone asked on my Facebook page about how to avoid "the dreaded dome" when baking a cake, I thought I'd do a little updated post on this topic and add some extra tips for how to get the top of your cake level or flat.

First thing, I should note that I'm talking about cakes baked in traditional round or square cake pans - not special shapes like a bundt cake. Having level cakes is really important when you're stacking a layer cake or tiered cakes. If you're not careful, domes lead to lopsided cakes or a cake that is leaning or may fall over.

Without too much rambling today, let's get to it!  

How to Stop a Cake from Doming:

1.  Bake lower and slower! 

What do I mean? The baking temperature I use for all of my cakes is 325°F (a lower temperature) and I adjust the baking time to bake them for 40 minutes to an hour or longer (slower).

If your oven is hotter, that will make the batter rise more quickly. That's how you end up with a domed cake. Instead, I always set my timer for 40 minutes and check them for the first time!  

Note: pan size matters when you're changing the time and temperature of your baking. Smaller pans are usually done or very close to done at around 40 minutes for my recipes. Bigger cakes will require a longer baking time.  When I make a larger cake (up to 16 inches for weddings) - I bake them for as long as an hour and fifteen minutes.

For this tip to work, your oven temperature needs to be accurate. This is easy to verify with an oven thermometer. I love all of the thermometers made by Thermoworks. I'd recommend the ThermoWorks Square Dot to check the temperature of your oven. 

You may also have to adjust my temperature and cooking time recommendations based on your cake recipes and the amount of batter you put in your cake pans. But overall, this lower/slower method allows the cakes to be baked more evenly.

2. Wrap cake strips around the outside of your pans when you bake cakes.  

Cake strips are thick fabric strips that are soaked in water and wrapped around the edges of the cake pans to bake more level cakes. These are usually secured with safety pins, velcro, or other clips that come with the strips. If budget is an issue, you can easily make homemade cake strips. 

This is the method that I dedicated an entire post to...   If you don't have the budget to buy cake strips, I have good news for you! You can read this post for instructions on cutting a wet towel into strips and you get the same result as using store-bought cake strips! Using strips of a damp towel around the outside of the cake pan works really well and you probably have everything you need already in your house!  

How does this work to prevent the top of the cake from doming?  The wet cake strips or wet towels lower the temperature on the outside edges of the pan, causing the outside of the pan to stay cooler and cook slower. As the cake rises, the heat is more evenly distributed and this gives the middle of the cake time to catch up with the edges and you end up with a flat top for your cake. Or at least smaller cake domes.

3.  Use Heating Cores. 

You have a couple of options here... you can use real heating cores (as seen above) - or you can use flower nails as heating cores.  I've done both!  

Here are some that I have:  Wilton Flower NailsAteco Heating Cores (these are called heating cores, but they look like flower nails...love them!!), and a Wilton Heating Core. Any or all of these products will help you prevent a cake from doming.

Standard Heating Cores

When I first started doing cake, I bought a standard heating core - as seen above. Someone also gave me one they weren't using anymore, so I have two.  To use these, I spray my pans with Baker's Joy or paint them with my homemade cake release, and then I spray/paint the heating core also (on the outside and inside - anywhere it's going to touch the cake).  

I got good results with the regular heating core I didn't love them.

Flower Nails

Then I found out I could use flower nails. I still spray the flower nails (or Ateco Heating Cores) with cooking spray and put them in the center of the pan (upside-down). These work great to prevent cake doming without having to patch up the center of the cake when you're done. 

These heating cores that look like flower nails (turned upside down) or standard heating cores basically do the same thing. They heat up in the middle of the cake batter and distribute heat from the center toward the outside at the same time that heat is baking the cake from the outside edges toward the center.  

This way the sides of the cake and the center are baking more evenly and you end up with a flat surface instead of a dome shape. After the pans and heating cores are prepped, fill the pans with batter as usual. Be sure to put batter inside the 'real' heating core at the same level as in the pan).

Then bake them (lower and slower!!) until a toothpick comes out clean.  You can see in the photo above that the one on the left has a flower nail and the one on the right has a heating core. Both cakes are baked perfectly level. For the one with the heating core, you just have to pop out that little plug of cake and put it back in the center:

Anywho... that's it!!   3 Ways to Avoid Domed Cakes!

More is better (sometimes) - Use Cake Strips and Heating Cores

Oh - one more thing!!  Sometimes, if I'm baking a really large cake or a giant sheet cake, I'll use 2 flower nails. Or I'll use a heating core and wet towels on the outside for extra assurance that the cake will come out level!

How to level a cake?

If after your best efforts, you still end up with a dome in the middle of your cake, you will want to fix that before stacking a layer cake. To do that, you'll either need a cake leveler or a long serrated knife to cut the dome off.

Either of these tools works very well for removing the dome and leveling your cake. And bonus, you can use the scraps to make cake pops!

Why You'll Love Toffee Chocolate Chip Cookies

Toffee and chocolate chip cookies are truly a treat for the senses. The combination of rich, melty chocolate chips and crunchy, buttery toffee bits creates a mouthwatering combination of flavors and chewy texture.

What is toffee?

You've heard of a Heath Bar, right? That's a candy bar with toffee in the center and it's coated with chocolate. So, toffee is a hard candy treat that has a rich, buttery flavor and a firm, yet crunchy texture that melts in your mouth. It is made by caramelizing sugar along with butter, over heat, until it reaches a beautiful golden brown color.

Once the toffee is cooked, it is then poured onto a baking sheet to cool and harden, then sprinkled with salt.

Then the only other thing to do is break it into bite-sized pieces that are perfect for adding to recipes or eating as a snack!

Toffee can also be coated in a layer of milk chocolate (like Heath Bars), which gives it an extra rich flavor that brings me so much joy!! These cookies could be called Heath Bar Cookies!

Ingredients

Almost all of the ingredients for chocolate chip and toffee cookies are pantry staples, so putting this cookie recipe together should be really easy!

  • All-purpose flour
  • Baking soda - be sure your baking soda is not expired!
  • Salt
  • Butter - I prefer salted butter but you can use unsalted butter if you prefer (or that's what you have on hand. Either way, the butter should be at room temperature.
  • Brown sugar
  • White sugar
  • Vanilla extract - I always make my own homemade vanilla extract but quality store-bought works just as well!
  • Egg - a whole, large egg, at room temperature
  • Semi-sweet chocolate chips
  • Toffee bits - the most common brand (usually the only brand) of toffee bits I can find are Heath Bar brand. And cookies with Heath Bar Bits are always a hit!!

Substitutions

  • Chocolate Chips: In place of semi-sweet chocolate chips, you could also use milk chocolate chips or white chocolate chips (or a combination of them) to change things up! Any combination will be delicious!

Tools needed to make the recipe

This toffee cookie recipe doesn't require anything special. Here are the only tools you'll need:

  • Mixing Bowls
  • Hand Mixer
  • Baking Sheet

How to Make Toffee Chocolate Chip Cookies

Chocolate Chip and Toffee Cookies are so delicious and truly easy to make. Almost all of the ingredients are pantry staples!

  1. Preheat oven to 350º F.
  2. Line the baking sheet (or cookie sheet) with parchment paper.
  3. Combine flour, baking soda, and salt, in a bowl and set aside. I like to use a hand mixer for this recipe but you can also use a stand mixer if you prefer.
  4. Using a mixer on medium speed, cream the butter and sugars together until light and fluffy.
  5. Add vanilla and egg and beat until combined.
  6. Add dry ingredients and stir until combined. Scrape down the sides with a rubber spatula.
  7. Stir in ½ cup toffee bits and ½ cup of chocolate chips.

  1. Drop by tablespoon onto an ungreased (or parchment-lined) baking sheet with at least 2 inches between each.
  2. Sprinkle the toffee bits cookies with the remaining toffee bits and chocolate chips.*

  1. Bake for 9-10 minutes or until the edges are set and the centers no longer look wet.
  2. Remove from oven and let cool on sheet for 5 minutes before transferring to a wire rack to cool.

Pro Tips for Chocolate Chip Heath Bar Cookies

  • You can mix all of the toffee and chocolate chips into the batter, but putting some on top makes them extra special. They look more gourmet with the extra couple of minutes it takes to press extra chips onto the top of the cookies before baking!
  • If you have one, use a cookie scoop to portion out the dough. You'll get more uniform and perfectly shaped cookies this way. Besides, it makes the work super easy!
  • Sprinkle some sea salt on top to add a little extra sweet/salty combo that also makes them super fancy!
  • If you have time, after you scoop the dough into balls, allow the cookie dough balls to chill for a couple of hours (or overnight). This allows the flavors to "marinate" together and really enhances the flavor!
  • If you have a silicone baking mat, you can use that in place of parchment paper. It may change the cooking time by a minute or two but you can do a test run with the first tray of cookies to find the ideal baking time for your oven.

Serving suggestions 

  • Of course, you should serve these warm with a tall glass of milk!
  • They'd also be delicious with coffee ☕️
  • These would be perfect for dessert, a snack, gifts, or pretty much any occasion!

Storage directions 

  • Storage: Store any leftover cookies in an airtight container at room temperature for up to 3 days.
  • Freezing: I would not freeze these cookies after baking, but you can certainly freeze the dough. Scoop out the dough balls onto a cookie sheet, then freeze them until solid. Place the frozen cookie dough balls in an airtight container or zip-top freezer bag and freeze for up to 6 weeks. Thaw at room temperature for around 2 hours when you're ready to bake them, then bake according to the original directions.

For many cake decorators and bakers, one of the most common issues is trying to figure out How to Transport a Cake. Having made thousands of cakes and delivered hundreds of cakes, I think I've finally stumbled upon the best way to transport a cake.

For me, it's Sugarworks Cake Porter boxes.

How to Transport a Cake

A few years ago, after making and delivering dozens of wedding cakes, I knew there had to be a better way of transporting cakes that wouldn't give me full-blown anxiety.

You see, I live in southern Mississippi where it's really, really hot (usually 75% of the year . So it wasn't just a matter of transporting them in a way that would keep them upright and protected (such as a cardboard box). I also needed a way to keep them cold or at least cool.

Air conditioning in a car wasn't enough with our extremely hot weather because direct sunlight coming through the windows still meant my cakes were at risk for melting or getting soft.

Because heat plus buttercream frosting is not a good combo, right? It's not great for fondant either. But with the trend of buttercream wedding cakes, a better way to transport cakes was a priority.

I needed something that solved multiple cake transport problems for me:

  • How to transport a tiered cake
  • More specificially, how to transport wedding cake
  • How to transport a cake in a car
  • How to transport a wedding cake long distance
  • and How to transport a cake and keep it cold

Enter the Innovative Sugarworks Cake Porter. This cake holder does all of that. It also answers the question of how to transport a cake without a box.

Initially, I purchased one of these cake boxes. I currently own two small ones and two medium ones. They don't make a large Cake Porter as far as I know so I don't understand their sizing or naming but you know... whatev.

If you need a cake carrier that solves your problem of how to transport a cake, this is the one you want.

Best Way to Transport a Cake

The Cake Porter is, in my opinion, the best way to transport a cake. Wedding cake transport is made easy with a Cake Porter and lots of features that I absolutely love.

  • No other box is necessary. I can take my cake straight out of the refrigerator and put it into this box with no other packaging. This keeps it protected from dust, sunshine, or something falling on it in transit. When adding a non-slip mat under the cake board, it also adds stability.
  • It keeps the cake cool (cold, even). The Cake Porter has an inside insulated box and an outside zip-up cover that is also insulated. I insert a couple of inexpensive ice packs in between the box and the insulated cover and my cakes travel for an hour or more and stay cold. When I open the box, it's like opening up a fridge and my cake is just as cold as when it left the house. Dry ice is another option if you can get your hands on it. It's not readily available anywhere near me in rural Mississippi so I stick with ice packs.
  • It's easy to assemble. This cake holder is really fast and easy to assemble. It also has a locking clip for easy closing, securing, and reopening.
  • It folds up for easy storage. Unlike some other cake transportation solutions, this cake transport box can be disassembled and folded flat for very easy storage that takes up very little space. This is great for a small shop or home bakery.
  • It is easy to clean. Both the Cake Porter insulated box and the outside cover are really easy to clean. Just wipe them down and you're done.

How to Transport a Wedding Cake

Having a Cake Porter solves the problem of how to transport wedding cake or how to transport a tall cake of any variety. The bottom line: transporting wedding cake is now a stress-free trip for me.

With this box, you don't need any other tall cake boxes. If you watch my videos below, you'll see my husband take two different 4-tier cakes out of the Cake Porters to unload them at weddings.

After I bought my Cake Porters, transporting a wedding cake became so much less stressful. I simply make a plan to finish all wedding cakes the night before the wedding and chill them overnight.

Then I add ice packs to the Cake Porters (between the inside box and outside cover), move the cake straight from the fridge to the cake carriers, zip them up and go!

Transporting a cake became easy and my cakes stay cold and protected for every delivery!

This huge wedding cake was transported in two of the Cake Porter boxes. I generally prefer to deliver a fully stacked cake but when they're this big, that's not possible!

The bottom 2 tiers (equal to the height of 5 tiers) were in the Medium Cake Porter and the top 3 tiers were in a Small Cake Porter. Both were secured with a wooden dowel before putting in the boxes. You can see full assembly photos in this post and lots of pics of the whole cake.

How to Transport a Cake with a Cake Porter

There are only two things I add to my Cake Porter that didn't come with it.

First, as previously mentioned, I buy reusable ice packs. I get these for really cheap at Walmart (or you can also get them on Amazon here) and keep them in my freezer. If you watch my assembly video below, you'll see how I use them.

Second, I use non-slip rug mats. I buy a big one that lasts me for a long time. Then I cut small squares to put inside the Cake Porter box (especially for smaller cakes) and I also spread out a large piece and put it under the entire box in the back of my SUV on a level surface. I get these specific rug mats from Walmart, but they also sell these on Amazon here.

If you have a smaller cake or the Small Cake Porter, you might even set it on your passenger seat or floorboard (I'd still use something to make sure it's level), but I don't think the Medium Cake Porter would fit in most seats.

You could also use shelf liner or something similar if you can't get your hands on a non-slip rug mat. Either way, set your loaded cake porter on a flat surface in your vehicle and you're good to go!

This Vertical Lines Buttercream Luxury Wedding Cake is one of my all-time favorites (for a lot of reasons) and I'm gonna share all the details, including how to make vertical lines on a buttercream cake.

What size are the wedding cake tiers?

Here are the sizes for this wedding cake:

  • 5-inch tier, 5 inches tall
  • 7-inch tier, 5 inches tall
  • 9-inch tier, 6 inches tall
  • 11-inch tier, 5 inches tall
  • 13-inch tier, 10 inches tall
  • 15-inch tier, 10 inches tall

In other words, it was a big, BIG cake. I don't know the total weight, but the bottom three tiers alone weighed about 65 pounds and the bottom tier was a Styrofoam (dummy) cake. I cannot fathom what the whole thing weighed or would've weighed had it been all cake.

What flavors were the cake tiers?

All tiers were filled and frosted with cream cheese buttercream ⬅️the best recipe!!

How many servings was the Vertical Lines Buttercream Wedding Cake?

The wedding cake had 234 servings. If the bottom 15-inch tier had been real, it would've been over 400 servings.

How did you do the vertical lines on the cake?

This is a great question. When the bride showed me an inspirational photo of the vertical combed buttercream design (or ribbed buttercream design) she wanted (this photo, to be exact), I spent quite a bit of time looking for a comb that would do what I wanted. I ended up buying this small Wilton comb set and this scalloped comb from Evil Cake Genius.

After trying both, I decided on one of the the smaller Wilton combs. But after doing four tiers... I realized it just wasn't looking like I wanted it to. The texture wasn't deep or significant enough on such a large cake. So I added more buttercream, smoothed them down, and started over with the slightly bigger comb.

It was exactly the look I wanted and both my husband and Sarah agreed it was the right choice. This was a new design and texture for me and I love it when I get to do new things... so this was right up my alley!

How did you assemble the cake?

A few people have asked about the assembly, so here are some step-by-step photos and explanations. You can also see the video above.

At home, I assembled the bottom 3 tiers onto the drum it would be presented on and doweled it.

This consisted of first gluing the dummy cakes (two 15-inch drums, each 5 inches tall and glued together) to the bottom drum, then covering it with cream cheese buttercream.

For the remaining tiers, they were frosted in buttercream and chilled before the following steps (no texture yet).

For the 13-inch tier, I had two layers of cake (with filling) on a cake board. I placed about 16 bubble tea straws in it (spaced about 2 inches apart). Then I stacked another two layers of cake (with filling in between) on another cake board.

I placed the second cake onto the first cake (making a 'double-barrel' cake), then stacked and centered that onto the 15-inch dummy cake.

And then I placed the 11-inch cake on top of the 13-inch cake. I measured the total height (including the drums and cakes with frosting) and cut a dowel the length needed. Then I put a center dowl all the way through from top-to-bottom.

I repeated this (separately) for the top three tiers (the 5-inch, 7-inch and 9-inch tiers) except I didn't cut the dowel off. I left it tall sticking out of the cake so I could remove it at the venue.

Once the two separate sections were assembled, I used the small scalloped comb to do the texture on all the tiers. I started at the bottom, held the comb perpendicular to the cake, and scraped upward. Then I used a small pallet knife to smooth out and remove any extra frosting on the top edge of each tier.

Step-by-Step Tall Wedding Cake Assembly

  1. First, my husband Richy carried in the top three tiers and left them on the table next to the groom's cake (sneak peek for you... it was 100% edible as well). Once he set the cake down, I pulled the dowel up and out of the bottom drum and slid this huge cake spatula underneath it.

  1. Then he carried in and placed the bottom three tiers on the cake stand. Yes, we drove this assembled cake for about a 40-minute drive in my Cake Porter boxes (this is the only way I transport cakes these days!).
  2. Next, he stared at it for a solid 3 minutes trying to catch his breath and mentally prepare to put the top tiers on the cake 😉

  1. Now it was time to place the top three tiers. He picked up the top cakes, and then we both climbed on stools. With my guidance, we slid the top three tiers off the cake lifter onto the bottom three tiers. And it could not have gone more smoothly.

  1. He can breathe now - and I'm a happy girl! We were both SUPER stressed about this cake so it was a relief that it was maybe one of the easiest assemblies ever - Praise the Lord!! That was an answered prayer and I'm so grateful that my friends were praying for us!!

  1. Then it was time to secure the top three tiers to the bottom three tiers. The hubby grabbed my hammer for me and I hammered it in - be extra careful not to miss the mark and put a hole through the top of the cake (been there, done that - not kidding!).

  1. Fully assembled - before flowers:

  1. Elaina Anders Designs did most of the flowers but I did the topper and a few final touches. Richy had to point out "holes" on top that needed flowers and I had to blindly place them... that was a little scary, but we're a great team. I'm no florist but I do love decorating a cake!

  • Use fresh shredded cheese! Pre-shredded has a coating of starch on it to keep it from sticking together in clumps. This starch will make the cheesy sauce lumpy when it's melted.
  • Sauce made with heavy cream will thicken on its own. If the sauce is too thick, you can add a little extra heavy cream or milk to thin it out.

Butter - I always buy salted butter but unsalted would work just as well.

Mini Marshmallows - Mini marshmallows melt so much easier but you could certainly use regular marshmallows if you want. Just use an equal amount (by weight).

Pumpkin Puree - this is 100% pumpkin - not pumpkin pie filling. Be sure to get the right stuff!

Pumpkin Pie Spice - you can use store-bought or make your own - I have a recipe here for Pumpkin Pie Spice.

Vanilla Extract - this is another thing you can buy store-bought or make your own. Homemade vanilla extract is amazing!

Crispy Rice Cereal - Of course, Kellogg's Rice Krispies are popular, but I usually get the Malt-O-Meal Crispy Rice Cereal and can't tell the difference.

So let's get started with How to Make an Easy Rainbow Cupcake Cake!

This Pull-Apart Rainbow Cupcake cake was the perfect solution for a rainbow party where kids could help themselves to a cupcake versus having someone cut and serve cake.

And if your kiddo or client is asking for a rainbow cake, but wants to save money on the budget, this is also a great solution. I don't know about your cake business, but with mine, cupcakes are significantly less expensive than a decorated cake.

Supplies You'll Need for a Cupcake Cake

Here's what you'll need for this exact cake:

Cupcakes. You'll need approximately 4 dozen cupcakes for this rainbow pull-apart cake. Of course, the size can be adapted based on your needs. Bake the cupcakes in any flavor you like.

I included a vanilla cake recipe below but you can also use one of my favorite cake recipes, one of these popular recipes, or any recipe that you love. You could even go really basic and follow the directions on the back of a cake mix box. You'll need two batches of almost any recipe to yield 48 cupcakes.

You could get really fancy and use a white cake mix and make colored batter, but that was more work than I wanted to do for this cake.

I think this goes without saying, but you'll also need a cupcake pan and cupcake liners. I used my favorite standard brown liners (that I love), but you could go with white cupcake liners or coordinate them to your board.

You could also use mini cupcakes for a much smaller design.

Cake Board. For this cake, I used a 20-inch by 16-inch cake board* a 20-inch x 30-inch foam board from Walmart, then covered it in white paper. You could also use a pre-covered cake drum if you like (and if you can find one large enough). (

*When I originally wrote this post, it was months after making the cake. I unintentionally put the wrong size board in the post. I'm inserting a (sloppy, thrown-together) mock-up of how I put the cupcake cake together using a (very old banged-up 20x30 board and empty cupcake liners), just to give you an idea of the layout with 48 standard-size cupcakes.

Buttercream Frosting. You're going to need all the ingredients to make a big batch of buttercream for this cake. I made this classic vanilla buttercream, but cream cheese frosting would also work. You probably know I recommend making buttercream in a Bosch Mixer... if you wonder why, check out this post. You will need approximately 19-20 cups. Here are the approximate amounts I used:

  • 3 cups pink frosting
  • 3 cups orange frosting
  • 2.5 cups yellow frosting
  • 2 cups green frosting
  • 2 cups blue frosting
  • 1.5 cups purple frosting
  • 5 cups white frosting

Gel Colors. I only use Americolor Gel Colors to tint my frosting. And for this cupcake cake, I used tiny amounts of Electric Gel Colors: Pink, Orange, Lemon Yellow, Leaf Green, Sky Blue, and Regal Purple. Any gel food coloring brand would work!

Electric Mixer. I use my Bosch Mixer for making buttercream. You could use a hand mixer for mixing the gel colors into the frosting, but I usually do this by hand.

Bowls. You'll want a bowl and spoon for each color of frosting you want to make. I use paper bowls for easier cleanup, but small-to-medium mixing bowls would also work!

Piping Supplies. I love these 18-inch piping bags and a 1M tip. The Ateco #824 tip also gives a very similar look.

How to Pipe a Rosette

If you haven't ever piped a buttercream rose or rosette, there is a learning curve. If you need to practice first, do that on a clean plate or plastic cutting board. Then you can scrape the frosting off and use it again.

In fact, if you haven't ever done it, I recommend that you do several practice runs before working straight on a cupcake! It's much easier to scrape it back into your piping bag from a plate than it is off a cupcake!

When you're ready, here's a short video for you showing how to pipe rosettes on the tops of the cupcakes:

Instructions: How to Assemble a Cupcake Cake

Be sure you have a board big enough to accommodate your design. For a cupcake cake this size, I used a 20x30 inch foam board from Walmart. I wrapped it in floral paper to make it a bit prettier.

To make sure I can do the design I want, I check this by laying out empty cupcake liners into the shape I want so I know how many cupcakes I'll need.

I leave the liners in place, then replace them with real cupcakes one at a time, so I keep my design lined up. I do not frost my cupcakes before putting them on the board in the rainbow shape!

Also, I always cover my board with paper, unless it's a pre-covered cake drum. When you're ready to attach the cupcakes, pipe a small dot of buttercream onto the bottom of the cupcake and place it on the board. Apply a little pressure to be sure it's good and stuck.

After all the cupcakes are in place, I pipe overlapping rosettes to cover them and make a cohesive design. There will not necessarily be one rosette per cupcake. I like to have them all run together so it looks more like a whole cake instead of individual cupcakes.

Pro Tips

  • If the board you're using feels flimsy, use two boards, glued together with hot glue, then wrap them.
  • Lay out empty cupcake liners or the baked cupcakes on the board BEFORE frosting them. When you have them like you want them, pick them up one at a time and add a dot of frosting to the bottom to "glue" them in place. THEN frost them.
  • Because you're making multiple colors, use disposable piping bags for easy clean-up. Double bag them with the frosting tip in the outer bag, then the inner bag full of frosting to easily switch between colors.
  • Use a cookie scoop to put the cupcake batter in the liners so they're all even and the same size.
  • Add rainbow sprinkles to the batter to make them fun on the inside!
  • Make all the frosting a day or two ahead of time so that making the cupcake cake comes together quickly. The frosting can sit at room temp (covered tightly) for a couple of days so it'll still be easy to pipe.
  • In the recipe below, you can change the flavor of the cupcakes by changing the cake mix and pudding flavor. Use butter cake and vanilla pudding mix, chocolate cake and chocolate pudding mix, lemon cake with lemon pudding mix, strawberry cake with strawberry pudding mix, etc.

How to Make an Easy Rainbow Cupcake Cake


Ingredients

Units
  • 2 (15.25 oz) white cake mixes
  • 6 whole large eggs
  • cup oil
  • 1 cup water
  • 16 oz. sour cream
  • 2 (3.4 oz) boxes instant vanilla pudding mix
  • 1 cup flour
  • 3 cups pink frosting
  • 3 cups orange frosting
  • 2.5 cups yellow frosting
  • 2 cups green frosting
  • 2 cups blue frosting
  • 1.5 cups purple frosting
  • 5 cups white frosting

*these are the approximate amounts of frosting I used. This may vary depending on how heavy-handed you are with the frosting, how much you overlap the rosettes, etc.


Instructions

  1. Preheat oven to 325°F.
  2. In a large mixing bowl, add all of the ingredients and mix on medium just until combined.
  3. Using a medium cookie scoop, scoop the batter into a cupcake pan lined with liners.
  4. Bake for 19 minutes.
  5. Allow to completely cool.
  6. On a prepped 20x30 inch board, lay out the cupcakes in a rainbow shape with clouds.
  7. After you're happy with the layout, "glue" them to the board with a dot of frosting on the bottom of each cupcake.
  8. Pipe rosettes on the rainbow, slightly overlaying each color until it's complete.
  9. Pipe white rosettes for the clouds.
  10. Enjoy!

Sometimes last year, my daughter Sarah and I went to Cracker Barrel for a girls' night out. She ordered the Cracker Barrel Stuffed Cheesecake Pancakes and she was hooked!

A few months later, after a particularly hard day for her, I decided to try and recreate the Cracker Barrel Strawberry Cheesecake Pancakes recipe for her at home. She immediately declared them one of her most favorite meals ever so I decided I needed to share them with the world!

What are Cracker Barrel Stuffed Cheesecake Pancakes?

The Stuffed Cheesecake Pancakes recipe from Cracker Barrel consists of two folded buttermilk pancakes, stuffed with cheesecake filling, topped with fresh strawberries, dusted with powdered sugar, and served with strawberry syrup.

For my version of Cracker Barrel Cheesecake Pancakes, I also use fluffy buttermilk pancakes (technically not cream cheese pancakes, but still) and fill or stuff them with an easy no-bake cheesecake filling.

Then I make a strawberry syrup and top with whipped cream, fresh berries, and powdered sugar.

Ingredients

Strawberry syrup:

  • Strawberries - chopped up really small
  • Sugar
  • Lemon Juice - you could use fresh-squeezed but bottled lemon juice is just fine!
  • Vanilla Extract - Store-bought or homemade vanilla

Cheesecake filling:

  • Cream Cheese - Full-fat cream cheese is the only way to go here
  • Powdered Sugar
  • Vanilla Extract - Store-bought or homemade vanilla
  • Heavy Whipping Cream - Not half & half but real heavy cream

Pancakes:

  • Buttermilk - If you don't have any, you can use a buttermilk substitute (recipe here)
  • Whole Milk - The amount may vary depending on how thick or thin you like your pancake batter
  • Eggs - Whole large eggs
  • Butter - I use salted, but unsalted would be fine
  • Sugar
  • Baking Powder
  • Baking Soda
  • Salt
  • All Purpose Flour

Toppings:

  • Strawberries - fresh sliced or chopped
  • Real Whipped Cream - freshly made (I have a whipped cream recipe here) or Redi-whip
  • Graham Cracker Crumbs - optional, sprinkled on top for a little more texture and cheesecake-iness 😂
  • Powdered Sugar - optional, dust it over the top

How to Make Strawberry Cheesecake Pancakes

Strawberry Syrup:

  1. Combine strawberries, sugar, lemon juice and vanilla in a medium saucepan and bring to a boil.
  2. Lower heat to a gentle simmer until the strawberries are soft and the syrup is thickened. Stir occasionally and keep cooking until it's reduced by ⅓ to ½ in volume. This will take approximately 15 minutes.
  3. Syrup will thicken upon standing so simply whisk in more water to reached desired consistency if needed.

Cheesecake filling:

  1. In a large bowl (or the bowl of your stand mixer), pour the whipped cream in and beat on high until stiff peaks form (around one minute for me).

  1. In a separate bowl, combine the cream cheese, sugar, and vanilla and mix until completely smooth and creamy.

  1. Gently fold the cream cheese mixture into the whipped cream and stir until completely combined and creamy.

  1. Chill until ready to assemble the pancakes.

Pancakes:

Of course, I don't have the exact recipe for the cheesecake pancakes Cracker Barrel makes, but mine might be better 😉

  1. First, add the buttermilk, melted butter, milk, eggs, and melted butter to a large mixing bowl, then use a hand mixer to mix until well combined (about one minute on high).

  1. In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Next, add the dry ingredients to the liquid mixture - mix until the batter is smooth! It will be thick, but that's okay. If it’s too thick to spread on your griddle (or large nonstick skillet), add small amounts of milk and mix again until you get a good consistency.

  1. Let the batter rest for at least 5 minutes - but no more than 10.
  2. Ladle the batter onto a hot griddle (I set mine to 350°), flipping when the edges start to bubble. You will want the pancakes to be around 6 inches when finished (although the flavor will be the same no matter the size… delicious!).

Assemble the pancakes:

  1. If you want them to look like the Cracker Barrel dish, lay two warm pancakes on a plate and spoon (or pipe!) around ½ cup of cheesecake mixture onto one-half of each pancake.

  1. Fold them over (sort of like a taco shape), then top them with strawberry syrup, fresh strawberries, and whipped cream.

TIP: Don't want to get so fancy? You can make a beautiful stack of pancakes by layering a pancake, cheesecake filling, then strawberry syrup. Repeat these layers with 2 or 3 (or 5?) pancakes, then top with fresh strawberries, more syrup, and whipped cream.

Recipe Pro-Tips

  • Don't overmix the pancake batter! Mix it just until combined to have the fluffiest, best-textured pancakes! Overmixing can lead to tough, rubbery pancakes.
  • Use a nonstick pan or griddle. If you don't have a nonstick pan, grease your pan really well with nonstick cooking spray or butter before cooking your pancakes.
  • Don't forget to let the batter rest for 5-10 minutes! Again - this gives your pancakes the best texture!
  • Since we don't have the official cracker barrel pancake recipe, you can use my recipe or if you have a favorite pancake recipe, feel free to swap it out and use your recipe. Another option is you could make pancakes from a baking mix. You could even use frozen pancakes or waffles if you really wanted to save time but they will not be as good - promise!
  • Use a measuring cup to scoop out your batter so that you ensure each pancake is the same size and cooks evenly.
  • Be patient when flipping: It can be tempting to flip the pancakes too early, but patience is key. Wait until you see bubbles forming on the surface of the pancake before flipping it. This ensures that the pancake is cooked enough to hold its shape and not raw in the middle.

  • Add the cheesecake filling generously: The more cheesecake filling you add, the more decadent and delicious your pancakes will be. Don't be afraid to be generous with the filling. After all, it's the star of the show! Double the cheesecake recipe when in doubt!
  • Keep the pancakes warm: To prevent your pancakes from getting cold while you cook the remaining batches, place them on a baking sheet in a warm oven (around 200°F) until you're ready to serve. They will also break instead of fold if they cool too much - in this case, make a stack instead of the filled taco shapes.

Recipe Variations

Because the strawberries aren't actually cooked into the pancakes, you can change up the syrup and toppings to go with the cheesecake filling and pancakes. Here are some possibilities (all of them have the cheesecake filling):

  • Blueberry Cheesecake Pancakes: Use blueberry syrup and fresh blueberries.
  • Peach Cheesecake Pancakes: Use peach preserves (melted) and fresh peaches.
  • Cheesecake Stuffed Chocolate Chip Pancakes: Add mini chocolate chips to the pancake batter, then use chocolate syrup and more chips on top!
  • Banana Nut Cheesecake Pancakes: Use maple syrup, chopped pecans, and fresh banana slices on top.
  • Caramel Apple Cheesecake Pancakes: Add apple pie filling on top with caramel syrup.

Serving suggestions 

  • What to serve with the recipe: I'm a salty & sweet girl so I always want bacon or sausage with my pancakes. You could also serve this with scrambled eggs and grits! Then of course you'll need coffee, milk, and or orange juice!
  • When to serve the recipe: Obviously breakfast 😉but we also made this for supper one night. I'd say it would be a real treat for a holiday breakfast or special occasion! 

Storage directions 

You can only store pancakes that have not been filled or topped with syrup and fresh fruit. However, the pancakes, cheesecake filling and strawberry sauce can all be kept separately.

  • Storage/refrigerating: If you have any leftover pancakes, simply place them in an airtight container or ziplock bag and store them in the refrigerator. They will stay fresh for up to 5 days. When you're ready to enjoy them again, just pop them in the microwave for a quick reheat before assembling! The cheesecake filling and strawberry will also keep in the fridge for up to 5 days (separately).
  • Freezing pancakes: If you want to pre-make a big stack of pancakes, layer them with parchment paper in between each pancake to prevent sticking. Place the stack in a freezer-safe bag or container and freeze for up to 2 months.
  • Thawing: When you're ready to eat, simply thaw the pancakes in the refrigerator overnight. The next morning, reheat them in the microwave before adding the filling and toppings. I would not freeze the cheesecake filling. The strawberry syrup could be frozen for up to 2 months in a freezer-safe container.
  • Reheating: The easiest way to reheat pancakes is in the microwave for 10-15 seconds at a time.

Recipe FAQs 

What is the secret to fluffy pancakes?

There are 3 secrets that will get you the fluffiest pancakes. First, use baking powder and baking soda, as I do in this recipe. The full answer to why this is true is here.

Second, use buttermilk. The acid in the buttermilk activates the baking soda to really fluff up the pancakes!

Third, let the batter rest for 5-10 minutes before scooping it onto the griddle! Following all 3 of these will yield to really tall, fluffy pancakes!

Can pancakes be made ahead of time?

Yes, they can. You can cook the pancakes then refrigerate them for up to 5 days in an airtight container or freeze for up to 2 months (with parchment paper between the pancakes).

How to pronounce charcuterie board?

Before we get too far - when I was writing this post, one of my teen sons sat down beside me and tried to read the title. He was struggling.

Since charcuterie boards are a trendy, somewhat "new" thing for a lot of us, the word itself can be intimidating. I'm saying this because I still have to pause before saying it 😉. And I'm sure I'm not alone - a lot of people don't know how to say the word.

So I thought it would be fun and informative to tell you how to say this word if you struggle like I did. You ready?

Well, this pumpkin cream cheese dessert is a dip that tastes just like a pumpkin pie. Or maybe better than a pumpkin pie... it tastes like a cheesecake... a pumpkin pie cheesecake dip. Yes, that's it. Pumpkin Cheesecake Dip. Maybe I should've named it that!

It's a fall-flavored dip that's a cross between a no-bake pumpkin cheesecake and a pumpkin pie... and you dip all of your favorite sweet snacks into it for a delicious appetizer or party food!

The ingredients list for this Pumpkin Pie Dip is short and sweet.

Cream Cheese - you could use low-fat cream cheese (Neufchâtel) if you like, but the regular cream cheese is so good! Have the cream cheese at room temperature before mixing! I've even heard recipes like this called Philadelphia cream cheese pumpkin dip because the cream cheese is that important and well, Philadelphia cream cheese is THE cream cheese 😉

Pumpkin Pie Mix - I call this canned ingredient "Pumpkin Pie filling", but just note that I'm not talking about canned pumpkin puree or just plain canned pumpkin. I'm talking about a canned pumpkin mix that's already sweetened and has some pumpkin spices already added. This is why you can skip the powdered sugar in the recipe!

Pumpkin Pie Spice - generally a mix of cinnamon, ginger, nutmeg, allspice, and ground cloves, but already made up!

Cool Whip - this whipped topping is an "easy" ingredient and pumpkin dip with cool whip is delicious in this recipe but if you have the time and will, make real whipped cream. You won't regret it.

Cinnamon - for garnish.

How to Make Pumpkin Cream Cheese Dip

These instructions could not be simpler.

  1. Start by placing your cream cheese, pumpkin pie mix, pumpkin pie spice, and Cool Whip into the bowl of your stand mixer.

  1. Mix on high with whisks or paddles until well combined.
  2. Place the cream cheese pumpkin dip in a serving dish and chill for at least 2 hours or until ready to serve (the longer it chills, the more "set" the texture will be).

  1. Place it in the center of your board and surround it with cookies and candies.
  2. Top the cream cheese mixture with cinnamon just before serving.

  • Be sure to have your cream cheese at room temperature - it will mix up so much more smoothly this way!
  • If you use the whisk attachment on your stand mixer or hand mixer, the dip will be smoother and creamier.
  • This dip can be eaten immediately but I really like to chill it for a couple of hours before serving. It'll have more of a cheesecake texture.

What should I eat Pumpkin Cream Cheese Dip With?

This Pumpkin Pie dip with Cool Whip would go well with so many things... my favorite being a Thanksgiving Dessert Charcuterie Board (see below)!!

Is pumpkin puree the same as canned pumpkin?

Yes, these are the same. They're both 100% pure pumpkin, steamed and pureed with no add-ins or additional flavors.

Is pumpkin pie mix the same as pumpkin puree/canned pumpkin?

No. Pumpkin Pie Mix is already sweetened and already has some spices in it - it's ready to be turned into a pumpkin pie by mixing in evaporated milk and pouring into a pie shell. See the first question for what pumpkin puree is.

It's also so good that I have friends and family who rely on it for their regular meal rotations... the verdict is in and this soup is a winner!

Potato Soup with Cream Cheese

This potato soup with cream cheese came about when I accidentally overbought potatoes several years ago and my hubby suggested that I make potato soup to use up a lot of them.

But I didn't have all the ingredients to make my usual recipe, so I started scouring the internet for a new recipe.

I searched online and ended up fusing 2 or 3 different recipes. And multiplying to feed our big family.  

With the kids' help (Christian peeled and cubed all the potatoes for me - he's a great kid!), I made this soup by combining a few ideas, and wow!

It might have been the best potato soup we've ever had!  It was superb!  If you're looking for a potato soup recipe with cream cheese - this.is.it.

Why You'll Love this Potato Soup Recipe with Cream Cheese

Save Money. First, it's a frugal recipe. You can easily feed a crowd without breaking the bank. All of the ingredients are pantry staples and there's nothing fancy involved.

Feed a Crowd. As I've already mentioned, you can feed a crowd. I've doubled and tripled this creamy potato soup recipe for winter parties and all of my guests loved it. It's such a crowd-pleaser!

Easy. And lastly, it's easy. There are no complicated techniques to make this red potato soup. And yet, it's so delicious, you'll want to make it again and again.

These ingredients are pantry staples! Nothing fancy or hard to find here but the flavors come together for an amazing soup! So grab everything and get it all together then you'll be ready to make this soup!

Chicken Base - I use chicken base mixed into water and prefer the Better than Bouillon brand. I use about 1 Tbsp. of Better than Bouillon per 4 cups of water and it's delicious!

Red Potatoes - peeled and diced

Heavy Whipping Cream - this gives a richness and creaminess to the soup that you don't want to miss! Using milk or half & half instead will lead to your soup not being as thick as it should be.

Onion - I use yellow sweet onions, but a white onion would work just as well.

Seasoned Salt - Lawry's is our preferred brand but you can season it to your taste.

White Pepper and Red Pepper - I really love both of these peppers and the extra zing they add, but you could omit them if you like

Cream Cheese - full fat, don't skimp on the cream cheese 😊. Sometimes this is called Philadelphia Cream Cheese Potato Soup - that's how important the cream cheese is! Crumbled Bacon - Optional, but not really! If you want to make life easier, buy premade bacon crumbles and save this step!

Cheddar Cheese - Again optional... but please add cheese!

Ingredient substitutions

Chicken Base: if you don't have (or don't use) chicken base, you could use chicken broth instead! You'll need 10 cups of it.

Potatoes: I have made this soup with russet potatoes (regular brown potatoes) and gold potatoes and it turns out great. Just make a note that when using russet potatoes, the soup will be smoother because russet potatoes break down and are mushier than red or gold potatoes.

Lower fat: If you want the soup to be lower in fat (and a little less rich), you could use low-fat cream cheese and half & half instead of heavy whipping cream. These options may change the texture and consistency of the soup, so please keep that in mind.

How to Make Potato Soup with Cream Cheese

  1. First, peel and dice the potatoes and dice the onion.
  2. Pour the water into a very large soup pot.
  3. Whisk in the chicken base.

  1. Add potatoes, onions, and spices to broth and mix up really well.
  2. Boil for about 20 minutes.

  1. When potatoes are fork tender, use a stick blender to slightly blend up the mixture. OR if you don't have a stick blender, take out one cup of soup, mash it up with a fork or potato masher, and stir it back into the pot. You can make it as creamy or lumpy as you like.

  1. Melt the cream cheese in the microwave for 1-2 minutes (in 15 second intervals).
  2. Add the cream cheese and heavy cream to the mix and stir until melted and creamy.

  1. Turn heat down to very low and simmer 20-30 minutes more until thickened.
  2. Stir the soup frequently to prevent it from sticking or scorching! See suggestions for toppings and add-ins below.

This soup will thicken up significantly overnight if you have leftovers. I like to thin it back out with a little milk when warming it.

Recipe Pro Tips

  • If you prefer a creamier soup, use a stick blender or immersion blender to mix it up and break down the soup so it's not so chunky.
  • After you add in the cream cheese, be sure to stir the soup frequently so the cream cheese doesn't sink and stick to the bottom. Also, cook on very low heat so it doesn't scorch.
  • If you're concerned about the cream cheese curdling, melt it separately in a small bowl in the microwave, then stir it into the soup.
  • If you want to serve this later, move it into a slow cooker on low to keep it warm and prevent sticking! Do not simmer for a long time on the cooktop.
  • If it's too thick, add milk or cream and stir until you get a consistency you like.
  • If you need a make-ahead meal, fix the soup and after cooking, move it into a slow cooker on low or "keep warm" for later in the day.
  • Time saver: Use pre-cooked bacon crumbles instead of cooking the bacon and crumbling yourself.

How to Thicken Potato Soup

If your soup is not as thick as you'd like, here are 5 ways to thicken potato soup:

  • Cook it longer. If the soup is too runny, allow it to simmer a little longer and it'll thicken naturally.
  • Use a stick blender. You can also use a stick blender or immersion blender at the end of cooking to break up more of the potatoes for a creamier and thicker soup. Alternately, you can scoop out another cup of soup and mash it up with a fork or potato masher, then add it back to the pot. (We did this in step 4, but you can do more for thicker soup.)
  • Use flour. Take out 2-3 tablespoons of soup and put it in a separate small bowl. Whisk in 1 tablespoon of flour and mix thoroughly. Add this mixture back to the pot of soup and mix it in. Heat for a few more minutes. This will affect the soup being gluten-free.
  • Use corn starch. Whisk 2 tablespoons of cornstarch into ¼ cup of water. Once the starch is dissolved, add the slurry to your pot of soup and stir thoroughly. Simmer the soup until it's a consistency you like.
  • Use instant mashed potatoes. Add in ¼ cup of instant potato flakes and the soup will thicken up quickly. Use more if needed but wait a few minutes because it's easy to overdo this hack!

Recipe Mix-ins

This Cream Cheese Potato Soup is so delicious, you can eat it as-is without any add-ins or toppings and you will not be disappointed. However, if you're a little extra (as I am), you may want to kick it up a notch.

Here are the things we've tried:

  • Cheese: We always have shredded cheddar with this soup. Always.
  • Bacon and Cheese: Our favorite way to serve this soup is topped with bacon pieces and shredded cheddar cheese. Top with sour cream and you have Baked Potato Soup!
  • Breakfast Sausage & Cheese: If you want a heartier soup, crumble and fry a pound of breakfast sausage. Then drain it and stir it in while the soup is simmering. Top with shredded cheese at the end! You will be blown away at how delicious it is.
  • Ham: Once we cubed chopped ham to our soup - also amazing! (with cheese, of course)!
  • Crackers: I am a big fan of crackers with soup and plain old saltines are my favorite with potato soup. I crumble a handful (maybe 5) into the soup and stir just before eating!
  • Miscellaneous: Other toppings I've seen for this soup are green onions and sour cream.

Serving suggestions 

  • Typically soups are considered "winter" fare but we enjoy this recipe year round. I also serve it at parties when I need to feed a crowd and sometimes make it to take to a family in need (grieving, new baby, etc.)
  • We always serve this soup with shredded cheddar and crackers even if we skip all the other mix-ins listed above!

  • Refrigerating: This soup will last in the refrigerator in an airtight container for 3-5 days.
  • Freezing: You can freeze potato soup but the texture will change after it's thawed. Freeze in a freezer-safe container, then thaw in the fridge overnight before reheating on the stovetop. You may need to add more cream if it's too thick.
  • Reheating: rewarm in the microwave for 1-2 minutes (depending on your microwave power) or on the stovetop. If reheating on the stovetop, add milk to thin the soup, then heat on low, stirring frequently until it's steaming.

Ingredients

Units
  • 10 cups of water
  • 3 heaping tablespoons of chicken base* Better than Bouillon is my favorite!
  • 5 lbs. of red potatoes, peeled and diced
  • ¼ cup finely diced onion
  • 1 tsp. seasoned salt

  • ½ teaspoon ground red pepper (optional)
  • Salt and pepper, to taste
  • 1 cup heavy whipping cream
  • (2) 8 oz. bricks of cream cheese
  • 6-8 slices of bacon, cooked and crumbled
